August Favorites

This month was filled with the last of summer showers, so it’s safe to say my fall wardrobe made an early appearance. August was bittersweet. I parted ways with my best friends as they went back to their college away from home. I ate endless amounts of vegan Thai ice cream, strolled through farmer markets, wore one too many band tees, and said hello to a new school year. I bring you my favorites throughout this mayhem of a month. My parents can’t imagine what it could be like to become vegetarian, let alone vegan. If, like me, you know you have to wait before taking the big step towards veganism, here are a few bits of advice that will show you how you can still help the planet. Shop locally The biggest mistake people make is to buy food or objects that have traveled a lot before arriving in their stores. Think about this bananas – you cannot find any bananas that were grown in France. If you buy one, it has to come from Africa, or even further, and all the energy it took from its origin until now is not worth it. July Favorites

July was filled with journaling and sunkissed days. Music festivals flooded the streets. Too many strawberries were eaten. Road trips with friends were enjoyed watching endless sunsets. What I Eat In A Day (Vegan)

BREAKFAST:   In the morning I had some oats with almond milk. I added bananas and blueberries on top. I also sprinkled some cinnamon to give it an extra kick of flavor :’) LUNCH:  For lunch, I felt like trying out a recipe. My friends have been pretty supportive of my vegan transition (aside from the usual vegan jokes or sending me vegan memes every 10 seconds) so my friend and I decided to try and make vegan cheese together. I made some mac&cheese by mixing my vegan cheese with some cooked pasta shells. My friend opted for some vegan nachos. You can find the recipe for the vegan cheese sauce here. DINNER:  Dinner was pretty simple. I had a bowl of lentils, potatoes, rice with corn, broccoli, and green bell peppers. I topped off my dish with some sriracha sauce.
